Assistant Restaurant Manager - Ballaro

About the role

Conrad Dubai is looking for an Assistant Restaurant Manager for its Ballaro Restaurant. The role supports the daily operations of the restaurant, inspires and guides the team, upholds high service standards and creates exceptional dining experiences while keeping operations smooth and efficient.

Key responsibilities

• Oversee daily operations of the pool bar, maintaining service standards and a welcoming poolside atmosphere.
• Supervise daily shifts, allocate responsibilities, monitor performance and ensure attentive, personalised service.
• Hold daily briefings covering occupancy, VIP guests, events, promotions and operational priorities.
• Train staff in beverage knowledge, service techniques and brand standards, and support appraisals, performance reviews and career development.
• Handle guest enquiries, feedback and complaints professionally and resolve them promptly.
• Drive revenue through upselling, cocktail recommendations and poolside promotions, and support budgeting and revenue reporting.
• Monitor stock levels, control beverage costs, minimise waste and coordinate orders with suppliers and the Stores team.
• Keep the pool bar, service stations, equipment and surroundings clean, organised and ready for service.
• Ensure compliance with health and safety, responsible alcohol service, hygiene, COSHH, risk assessments and audit standards, and maintain accurate records, stock documentation and cash-handling procedures.
• Support the Restaurant Manager in implementing policies and procedures, and deputise for the Restaurant Manager when required.
• Foster teamwork, recognise employees, handle disciplinary matters and grievances fairly, and collaborate across resort departments.

Required profile

• A passion for hospitality, integrity, leadership, teamwork, ownership and accountability.
• Ability to lead by example in personal grooming, appearance, hygiene and conduct.
