Chef De Partie - Assembly

About the role

Emirates Flight Catering Co (L.L.C) is looking for a Chef De Partie for its assembly section in Dubai. The role covers the timely and efficient preparation of food items according to specifications, recipes and passenger load requirements, while monitoring storage, handling, consumption, portions and waste.

Key responsibilities

• Prepare all departmental food items on time and efficiently, following specifications, recipes and passenger load requirements.
• Monitor product storage, handling and consumption throughout production, and monitor portion and waste control to optimise cost.
• Investigate variances, propose and implement recipe and specification revisions, and propose proactive cost-reduction measures.
• Manage allocation of materials, staff and equipment, and train and guide the team on products, processes, menus, ingredients and equipment.
• Report equipment downtime and help design preventive maintenance schedules for the area.
• Help schedule and prioritise work so that late orders or changes can be accommodated where reasonable.
• Act as a bridge between management and the team, and follow company policies including SOPs, GMPs, ISO9001-2008 QMS and OHSAS.

Required profile

• High school diploma or Diploma in Hotel Management.
• At least 4 years of experience in the culinary field.
• Knowledge of food products and processes in a facility with extensive in-house production, and international recipe exposure.
• Excellent knowledge of cooking, with some exposure to recipe creation, menu development and costing.

Required skills

• Working knowledge of automated kitchen or bakery machines and knife skills.
• Food preparation and presentation skills.
• Strong communication, planning, delegation, problem-solving and decision-making skills.
• Willingness to learn, adapt and train oneself with organisational growth and technical advances.
