Chef De Partie - Cold Kitchen

About the role

Emirates Flight Catering Co (L.L.C) is hiring a Chef De Partie in Dubai. The jobholder guides, assists and monitors the performance of the Cold Kitchen team during their shift, coordinates all activities within the section and communicates with internal clients and suppliers where necessary. The role can also cover a Sous Chef position as a leave reliever or for longer terms, depending on the size of the team.

Key responsibilities

• Prepare all food items on time and efficiently according to specifications, recipes and passenger load requirements.
• Monitor product storage, handling and consumption throughout production to meet production standards.
• Control portions and waste to optimise cost, investigate variances and take corrective action.
• Train staff on products, processes, menus, ingredients and equipment, and manage material, staff and equipment resources effectively.
• Propose and implement cost-reduction measures and recipe/specification revisions, and act as a bridge between management and the team.
• Report equipment downtime and help design preventive maintenance schedules for the area.
• Guide the team in scheduling and prioritising work so that late orders or changes can be accommodated where reasonable.
• Follow company policies and standards such as SOPs, GMPs, ISO9001-2008 QMS and OHSAS.

Required profile

• Hotel Management or Culinary degree.
• At least 5 years of experience in the culinary field.
• Experience in hotel catering in a 5-star facility with excellent knowledge of cooking and different cuisines.
• Previous experience in high-volume or banqueting kitchens is preferred.
