Chef De Partie – Latin American Restaurant

About the role

The Ritz-Carlton is seeking a Chef De Partie to join its Latin American restaurant in Dubai. You will be responsible for preparing high‑quality dishes, maintaining kitchen standards, and supporting the culinary team during busy periods.

Key responsibilities

• Prepare special meals and substitute items according to recipes and presentation standards.
• Regulate temperature of ovens, broilers, grills and roasters.
• Thaw frozen items in refrigeration and ensure proper portioning, arrangement and garnish.
• Maintain food logs and monitor quality and quantity of prepared food.
• Communicate assistance needs, inform the Chef of excess items for daily specials, and update service staff on menu specials and out‑of‑stock items.
• Assist management with hiring, training, scheduling, evaluating and coaching employees.
• Follow all company, safety and security policies, report maintenance issues and complete required safety training.
• Uphold professional uniform standards and protect confidential information.

Required profile

• Technical, trade or vocational school degree.
• At least 3 years of relevant culinary experience.
• No prior supervisory experience required.
• No specific license or certification required.
