About the role
The Chef de Partie Pastry will join the Rüya Specialty Restaurant team at St. Regis Dubai, delivering high‑quality pastry dishes and supporting daily kitchen operations. This role focuses on preparing both hot and cold pastry items while maintaining strict quality and presentation standards.
Key responsibilities
- Prepare and cook pastry items according to recipes, quality and presentation standards.
- Regulate oven, broiler and grill temperatures and ensure proper food storage and thawing procedures.
- Maintain food logs, monitor portion sizes, garnish dishes and ensure consistency of menu specials.
- Communicate with kitchen and service staff about menu changes, out‑of‑stock items and excess food for daily specials.
Required profile
- Technical, trade or vocational school qualification in culinary arts or pastry.
- Minimum three years of relevant pastry experience in a hotel or specialty restaurant.
- Ability to work on feet for extended periods and lift up to 25 lb without assistance.
- Commitment to follow safety, hygiene and company policies.
