Chef De Partie Specialty - Pastry Shop

About the role

Wynn Al Marjan Island, the first integrated resort in the UAE set to open in 2027, is looking for a Chef de Partie Specialty - Pastry Shop to join its Culinary team. The resort will be located 50 miles from Dubai International Airport in Ras Al Khaimah and will include 1,530 rooms and suites, 22 restaurants, lounges and bars, a theater, a beach club, a five-star spa and a shopping promenade.

Key responsibilities

• Oversee the daily operations of the Pastry Shop kitchen to ensure efficiency, consistency and adherence to culinary standards.
• Monitor resource consumption and optimise the use of equipment, ingredients and inventory.
• Develop weekly set menus, monthly promotions and seasonal offerings with the Executive Chef.
• Prepare and present dishes according to recipes, quality standards and presentation guidelines.
• Lead, coach and support the kitchen team to maintain high performance, productivity and teamwork.
• Maintain kitchen cleanliness and hygiene in line with HACCP, health and safety regulations.
• Deliver consistent high-quality pastry cuisine and respond promptly to guest requests and feedback.
• Carry out additional duties as assigned by the Executive Sous Chef or Executive Chef.

Required profile

• Secondary school diploma or equivalent; culinary qualification preferred.
• Minimum of 8 years' experience in a 5-star kitchen, including substantial pastry shop experience and kitchen leadership.
• Flexibility to work shifts and adapt to changing schedules.
• At least 18 years of age.

Required skills

• Strong knowledge of pastry shop, including cost control and pricing of ingredients and supplies.
• Leadership and supervisory skills, with the ability to motivate and mentor team members.
• Excellent communication, organisation and time management skills.
• High attention to detail and basic computer literacy.
