Chef de Partie – Steak House

About the role

The Chef de Partie will work in the Steak House of The Ritz‑Carlton Abu Dhabi, preparing special meals, regulating cooking equipment and ensuring high standards of portioning, garnish and presentation.

Key responsibilities

• Prepare special meals and substitute items according to recipes and quality standards.
• Regulate temperature of ovens, broilers, grills and roasters.
• Thaw frozen food in refrigeration units and maintain accurate food logs.
• Ensure proper portion size, arrangement and garnish for each dish.
• Monitor food quality and quantity, informing the Chef of excess items for daily specials.
• Communicate menu specials and out‑of‑stock items to Food & Beverage service staff.
• Prepare and cook cold foods and follow food preparation checklists.
• Support management with hiring, training, scheduling and employee coaching as needed.

Required profile

• Minimum three years of relevant culinary experience, preferably in a steak house or fine‑dining environment.
• Technical or vocational culinary education preferred.
• Ability to stand, walk, bend and lift objects up to 25 lb for extended periods.
