Chief Steward / Hygiene Manager

About the role

The First Group Hospitality is seeking a Chief Steward / Hygiene Manager to lead stewarding operations and uphold hygiene, sanitation, and food‑safety standards at an exclusive luxury destination in Abu Dhabi. This senior role combines team leadership, operational supervision, compliance monitoring, training, inspections and continuous improvement.

Key responsibilities

• Lead and manage daily stewarding and hygiene functions.
• Supervise Stewarding Supervisors, Kitchen Stewards and hygiene personnel.
• Develop and implement hygiene, sanitation, cleaning, disinfection and food‑safety procedures.
• Establish cleaning schedules, inspection checklists, standards and corrective‑action plans.
• Monitor compliance with food‑safety regulations, HACCP principles and health requirements.
• Conduct regular inspections of kitchens, service areas, storage, receiving, staff facilities and waste zones.
• Ensure proper cleaning, sanitising, drying, storage and handling of equipment, utensils, crockery, cutlery, glassware and service items.
• Oversee food‑handling practices, temperature control, labeling, stock rotation and personal hygiene.
• Coordinate hygiene and sanitation requirements with Kitchen, F&B, Housekeeping, Stores, Maintenance, Recreation, Security and other departments.

Required profile

• Proven experience in stewarding and hygiene management within a luxury hotel or resort.
• Strong knowledge of HACCP principles and local food‑safety regulations.
• Ability to lead multidisciplinary teams and drive continuous improvement.
• Excellent organisational and inspection skills.
