Commis I - Fine Dining Kitchen

About the role

Swissôtel Al Murooj, a Swissôtel by Accor in downtown Dubai, is hiring a Commis I for its kitchen. The role covers planning, preparation, plating and station setup under the direction of the chefs, with a focus on hygiene, quality and teamwork.

Key responsibilities

• Plan and organize daily tasks, make requisitions and prioritize work to meet delivery times
• Prepare mise en place and set up the station on time, using production lists and shift-handover SOPs
• Follow HACCP guidelines, clean-as-you-go and sanitary requirements, and keep waste low
• Taste and season food correctly and plate orders from F&B staff accurately and on time
• Store food covered, dated and labelled, and rotate stock according to procedure
• Assist in same-day and advance preparation for other stations and cross-train when asked
• Turn off equipment safely, clean work areas and help direct stewards with cleaning
• Sign for tools and uniforms, fill out log sheets daily, and stay on site only with manager authorization after hours
• Work overtime when approved by the chef de cuisine or executive chef

Required profile

• College graduate or equivalent education from an accredited culinary institute or formal culinary training
• At least one year of professional kitchen experience in a fine dining or upscale establishment
• Ability to work independently and under pressure, with strong organization and time management
• Willingness to work unsupervised and adapt to business demands and working hours
