Commis I - Luxury Hotel Kitchen

About the role

Fairmont Bab Al Bahr, a five-star beachfront luxury hotel in Abu Dhabi, is hiring a Commis I. The role is based in the kitchen, supporting the Chef de Partie, Sous Chef and Executive Chef on à la carte, buffet, banquet and special event service.

Key responsibilities

• Prepare and cook food to standardized recipes, portion control and presentation standards, and complete daily mise en place.
• Work independently in the assigned kitchen section while keeping quality consistent.
• Monitor food freshness, quality and storage using FIFO principles, and serve food to Fairmont's quality standards.
• Maintain clean and organized workstations, equipment, utensils and storage areas.
• Follow HACCP, food safety, hygiene, sanitation and occupational health and safety standards.
• Complete daily requisitions, stock control, temperature logs and cleaning records, and minimize food waste.
• Support the kitchen team on à la carte, buffet, banquet and special event operations.
• Help train and guide Commis II and Commis III colleagues, and take part in daily kitchen briefings and departmental meetings.
• Report equipment faults, food quality concerns or operational issues to supervisors, and suggest menu and operational improvements.
• Perform other duties assigned by the Executive Chef or supervisor.

Required profile

• Sound knowledge of international culinary techniques, food preparation and kitchen operations.
• Thorough understanding of HACCP, food hygiene and sanitation standards.
• Good communication and interpersonal skills.
• Ability to work efficiently under pressure in a fast-paced luxury hospitality environment.
• Positive attitude and commitment to exceptional guest service.
