Cost Controller – Hospitality

About the role

We are looking for a Cost Controller to join Mama Shelter Dubai, a vibrant hotel brand within the Accor portfolio. The role will monitor and analyse operational costs, ensuring the property stays within budget while supporting smart business decisions.

Key responsibilities

• Monitor daily, weekly and monthly operational costs and compare them to approved budgets.
• Maintain accurate cost records for COGS, inventory, labour and other expenses.
• Conduct regular audits of cost reports to identify discrepancies and efficiency opportunities.
• Track inventory levels, prevent over‑stocking and stock‑outs, and manage purchase orders and invoices.
• Prepare cost performance and variance reports for management, highlighting trends and concerns.
• Support annual budgeting, forecasting and cost planning across departments.
• Analyse labour costs, overtime and staffing patterns to aid workforce planning.
• Identify and drive cost‑saving initiatives in partnership with Procurement and Operations.

Required profile

• 3–5 years of experience in cost control, accounting or a similar role, preferably in hospitality.
• Strong understanding of cost control principles, budgeting and financial reporting.
• Excellent attention to detail and ability to maintain accurate financial data.
• Proactive attitude with the ability to work in a fast‑paced environment and meet deadlines.
• Team‑player who can collaborate with Finance, Procurement and Operations.

Required skills

• Microsoft Excel (advanced proficiency).
• Experience with financial and accounting systems.
