Demi Chef de Partie – Japanese Kitchen (Kigo)

About the role

The Four Seasons Dubai DIFC is seeking a Demi Chef de Partie to work in the Kigo restaurant, supporting both Kaiseki and Sushi stations. You will help deliver authentic Japanese dishes while maintaining the high standards of service and hygiene expected by the brand.

Key responsibilities

• Assist in the preparation and presentation of dishes in both Kaiseki and Sushi sections.
• Flexibly support either section based on business needs and shift assignments.
• Ensure proper mise en place, service, and cleanliness of the kitchen area.
• Follow recipes, portion control, plating standards and HACCP food‑handling guidelines.
• Communicate with team members to ensure smooth coordination during service.
• Monitor ingredient stock levels and report shortages to senior chefs.
• Continuously learn and adapt to techniques used in Kaiseki and Sushi cuisine.

Required profile

• 2–3 years of kitchen experience in Japanese cuisine.
• Basic knowledge of Kaiseki or Sushi preparation.
• Willingness to learn and work in both sections.
• Strong knife skills and attention to detail.
• Good communication and teamwork abilities.
• Understanding of food safety and hygiene standards.
• Passion for Japanese culinary traditions.
