Director of Food & Beverage

About the role

The Director of Food & Beverage will lead the F&B department of Kempinski Hotel Mall of the Emirates, driving revenue while ensuring sustainable and profitable operations. This senior position reports directly to hotel management and is responsible for delivering a differentiated guest experience that aligns with Kempinski’s brand standards.

Key responsibilities

• Set an example through punctuality, professional appearance and adherence to Kempinski grooming standards.
• Oversee daily operations across all outlets (breakfast, lunch, dinner, lobby, banqueting, room service, bar) and conduct regular service checks.
• Prepare and consolidate the annual department budget in collaboration with Finance.
• Produce monthly income statements, hold performance meetings with outlet managers, and drive financial results.
• Lead daily briefings with the Executive Chef and conduct regular F&B team meetings.
• Maintain and update departmental operation manuals annually.
• Source high‑quality products, build strong supplier partnerships, and monitor quality and guest satisfaction.
• Develop and execute a yearly marketing plan, including competitor analysis and trend monitoring.
• Handle guest complaints promptly and ensure corrective actions.
• Collaborate with the hotel’s PR manager on F&B promotions and events.

Required profile

• Strong leadership with a hands‑on approach and ability to inspire a large team.
• Thorough knowledge of food and beverage concepts, products and services.
• Excellent understanding of budgeting, financial reporting and cost control.
• Proven ability to develop and implement marketing and quality‑assurance initiatives.
• High standards of personal appearance, hygiene and professionalism.
