Head Chef – Casa Mia Italian Cuisine

About the role

The Head Chef will lead the culinary operations for Casa Mia, an Italian restaurant within Le Méridien Dubai. Reporting to senior management, you will ensure daily kitchen performance meets the brand’s high standards while driving guest and employee satisfaction.

Key responsibilities

• Oversee all kitchen areas, ensuring consistent, high‑quality food production.
• Prepare and cook a full range of dishes, including special guest menus.
• Develop new menus and recipes, aligning with brand standards and creative vision.
• Maintain strict food safety, sanitation, and temperature controls.
• Manage purchasing, receiving, storage, and inventory to control costs.
• Supervise kitchen staff, schedule shifts, and provide training and development.
• Monitor equipment performance, report malfunctions, and ensure proper maintenance.
• Implement waste‑reduction and environmentally friendly preparation processes.

Required profile

• High school diploma or GED with at least 4 years culinary experience, OR a 2‑year degree in Culinary Arts/Hotel Management with 2 years experience.
• Proven ability to lead a kitchen team and manage food‑related functions.
• Strong knowledge of food handling, sanitation standards, and relevant regulations.
