Head Chef - Spanish Cuisine

About the role

Kempinski is looking for a Head Chef for its Spanish cuisine kitchen in Dubai. The Head Chef oversees kitchen operations, ensures high-quality food is delivered, manages kitchen staff and keeps the workplace safe and sanitary. The role also covers menu planning, inventory management and keeping within budget.

Key responsibilities

• Help organise special events and food promotions, and take part in drafting concepts and menus for them, using staff ideas where practical
• Supervise the kitchen in preparing and presenting food in line with hotel food and beverage standards and menu guidelines
• Maintain product knowledge of ingredients, equipment, suppliers and market trends, and recommend adjustments to kitchen operations
• Keep the kitchen and personal hygiene hygienic; implement and practice HACCP
• Work with the Superior and Director of People Services on staff performance, future staffing needs, training needs analysis and performance appraisals
• Oversee departmental standards and procedures, coach, counsel and discipline staff, and approve leave based on hotel occupancy
• Help prepare and manage the department budget, control costs and stay within budget
• Follow OH&S policies, duty of care, property safety, first aid and fire procedures, and log security incidents and accidents

Required profile

• Minimum 6 years of kitchen experience and 2-3 years of management experience in a Spanish restaurant
• Excellent spoken English; Spanish is beneficial
• Ability to work independently, handle pressure and build effective working relationships with hotel staff and clients or vendors
• Good organisational and time management skills, and ability to delegate effectively
