Head Sushi Chef – Luxury Hotel

About the role

The Head Sushi Chef will lead the sushi kitchen at The St. Regis Abu Dhabi, ensuring the highest standards of Japanese culinary excellence, food quality, presentation, hygiene and guest satisfaction in a luxury hotel environment.

Key responsibilities

• Lead daily operations of the sushi kitchen, ensuring smooth and efficient service.
• Prepare and oversee high‑quality sushi, sashimi, nigiri, maki, temaki and other Japanese specialties.
• Maintain strict hygiene, food safety and presentation standards.
• Monitor ingredient quality, storage, rotation and portion control.
• Collaborate with the Head Chef to develop seasonal menus, special promotions and innovative sushi concepts.

Required profile

• Diploma or professional qualification in Culinary Arts, Japanese Cuisine or a related field (preferred).
• 3–5 years of professional experience in a high‑end Japanese or sushi restaurant, with leadership experience.
• Strong knowledge of traditional and contemporary Japanese cuisine.
• Proven ability to lead, train and develop a high‑performing culinary team.
