Hygiene Manager

About the role

The Hygiene Manager ensures that all food and beverage operations at Ajman Saray meet the highest hygiene and food safety standards. This role involves training staff, conducting inspections, and providing technical advice on labeling and compliance.

Key responsibilities

• Verify compliance with Marriott International Brand Standard Audits and local food safety regulations.
• Provide in‑house food hygiene training for new hires and trainees.
• Identify risk areas in food operations and implement pre‑emptive corrective actions.
• Conduct daily kitchen inspections and record findings, issuing corrective action plans.
• Perform regular vendor, equipment, and internal BSA inspections in partnership with culinary leadership.
• Coordinate cleaning programs across all F&B areas and liaise with pest control services.
• Maintain documentation on hygiene standards and update food safety procedures.

Required profile

• High school diploma/GED with 4 years of food & beverage experience, OR a 2‑year degree in Hospitality/Business with 2 years of relevant experience.
• Preferred: Environmental Health or Culinary degree.

Required skills

• Knowledge of food safety regulations and brand audit requirements.
• Ability to conduct inspections, produce reports, and develop corrective action plans.
• Experience delivering food hygiene training.
• Understanding of product labeling requirements for government compliance.
