About the role
Avani Ibn Battuta Dubai Hotel is seeking an Italian Sous Chef to lead the restaurant kitchen. The role combines culinary creativity with operational excellence, ensuring safe, smooth, and profitable kitchen operations while delivering locally inspired Italian cuisine.
Key responsibilities
- Organise all kitchen activities, maintaining safety, efficiency and profitability.
- Develop and maintain cuisine concepts, menu standards and seasonal menu changes.
- Control food costs through proper preparation, inventory management, requisition and portion control.
- Ensure compliance with food safety, sanitation and Minor Hotels presentation guidelines.
- Forecast weekly business demand for staffing and production planning.
- Conduct monthly preventative maintenance inspections and manage kitchen assets.
- Lead, train and supervise team members, including hiring and disciplinary actions with the Executive Chef.
- Promote positive inter‑departmental communication and lead by example.
