Junior Sous Chef - Lobby Lounge

About the role

Mandarin Oriental Downtown in Dubai is seeking a Junior Sous Chef for its Lobby Lounge. You will work closely with the Head Chef to deliver exceptional food quality and presentation while ensuring smooth kitchen operations and outstanding guest experiences.

Key responsibilities

• Support the Head Chef in all kitchen duties, from prep and cooking to plating, while maintaining top‑tier quality, hygiene and safety standards.
• Train, motivate and supervise kitchen staff to ensure faithful execution of recipes and consistent presentation of dishes.
• Oversee service periods to maintain smooth operations and timely delivery of dishes.
• Manage inventory and ordering to keep key ingredients in stock, optimise costs and protect profitability.
• Uphold stringent cleanliness and food‑safety protocols in line with hotel policies and local regulations.

Required profile

• Experience in a similar role within a five‑star luxury hotel or fine‑dining setting, preferably lounge experience.
• Familiarity with inventory and procurement processes to enhance efficiency and profitability.
• Strong leadership and team‑management skills, capable of motivating a multicultural culinary team.
• Effective communication in English; Arabic is a strong asset.
• Highly organized, detail‑oriented and able to multitask under pressure.
