Lead Sushi Chef (Dubai)

About the role

The Lead Sushi Chef will oversee all sushi production and kitchen operations at our Dubai restaurant, ensuring that dishes meet the highest quality and presentation standards while maintaining strict hygiene. This senior position coordinates with pastry chefs, sous chefs, managers and stewards to deliver a seamless dining experience.

Key responsibilities

• Supervise kitchen staff during shifts, guaranteeing food preparation, organization and presentation follow established standards.
• Maintain kitchen equipment, arrange repairs and ensure all tools are in proper working order.
• Train and coach staff according to planned programs, correcting production methods as needed.
• Control waste, enforce portion control and keep food costs within target percentages.
• Develop new menus and recipes, contribute creative ideas for merchandising, decoration and presentation.
• Order fresh and dry goods daily, manage stock levels at par and minimize spoilage.
• Ensure compliance with UAE cleanliness, health, safety and fire‑life safety regulations.
• Monitor departmental budgets, analyze costs and implement corrective actions to meet financial goals.
