Pastry Commis (Level 1) – Dubai

About the role

We are looking for a Level 1 Pastry Commis to join the culinary team at St. Regis Dubai. The role involves preparing breads and pastries, from dough mixing to proofing, baking and decorating, while adhering to production plans and food‑safety standards.

Key responsibilities

• Prepare breads, pastries, doughs and fillings according to recipes and production sheets.
• Proof, bake and decorate baked goods to the required quality and presentation standards.
• Maintain kitchen logs and ensure compliance with the food‑safety program.
• Monitor appliance temperatures and report any issues to management.
• Keep the Chef informed of excess inventory for daily specials planning.
• Assist in hiring, training, scheduling and coaching team members as needed.
• Follow all company policies, safety procedures and personal hygiene standards.

Required profile

• Technical, trade or vocational school degree in culinary arts or related field.
• Minimum 2 years of experience in a pastry or bakery environment.
• No supervisory experience required.

Required skills

• Baking and pastry preparation techniques.
• Food safety and hygiene compliance.
• Operation of kitchen appliances and measuring equipment.
