Restaurant Manager

About the role

As the Restaurant Manager of Tutto Passa at DELANO Dubai, you will oversee the day‑to‑day operations of an elevated Italian restaurant serving breakfast, lunch and dinner. You will create a warm, energetic atmosphere that reflects the brand’s Italian hospitality while driving commercial performance.

Key responsibilities

• Lead daily operations across all service periods, maintaining high standards of service, pacing and guest engagement.
• Be visible on the floor, building genuine relationships with guests and delivering personalised hospitality.
• Motivate, coach and develop the restaurant team, fostering a positive culture of teamwork and confidence.
• Manage staffing, schedules and deployment based on reservations and forecasted covers.
• Drive revenue through table optimisation, upselling and monitoring KPIs such as revenue, covers, average spend and labour productivity.
• Collaborate with culinary and bar teams to ensure seamless service timing, presentation and consistency.
• Handle guest feedback and service recovery promptly and thoughtfully.
• Maintain compliance with food safety, hygiene, licensing and health‑and‑safety regulations.

Required profile

• Proven experience as a Restaurant Manager or senior Assistant Manager in a luxury hotel or upscale standalone restaurant.
• Strong background in à‑la‑carte service with expertise in floor management and guest engagement.
• Experience in an Italian or Mediterranean concept is highly desirable.
• Demonstrated ability to lead, coach and develop diverse teams while achieving commercial targets.
• Fluency in English; additional languages such as Russian or Italian are a plus.
