Sous Chef - Arabic Sweets

About the role

Wynn Al Marjan Island is seeking a Sous Chef specialized in Arabic sweets to support the Executive Chef in delivering authentic, high‑quality desserts across its upcoming integrated resort. The role involves overseeing daily production, ensuring consistency, and maintaining strict food‑safety standards.

Key responsibilities

• Support the Executive Chef in managing Arabic and Indian sweets production, including baklava, kunafa, maamoul, basbousa, qatayef, luqaimat, and specialty orders.
• Supervise kitchen team members during peak production periods and festive seasons.
• Maintain hygiene, sanitation, and HACCP compliance throughout the production area.
• Monitor inventory of nuts, ghee, dates, syrups and other key ingredients to minimise waste.
• Assist with production planning, scheduling and prioritisation for high‑volume periods.
• Ensure equipment and work areas are clean, safe and fully operational.

Required profile

• Recognised culinary qualification or professional training in Pastry Arts with a focus on Arabic and Middle‑Eastern sweets.
• Proven experience producing Arabic sweets in a luxury hotel, resort or high‑volume production environment.
• Strong knowledge of traditional recipes, phyllo and kataifi work, semolina‑based pastries and syrup preparation.
• Ability to lead and develop production teams while maintaining quality standards.
