Sous Chef – Chinese Cuisine at Yù & Mì

About the role

The Mandarin Oriental Downtown Dubai is seeking a Sous Chef to join the Yù & Mì restaurant team. Reporting to the Executive Chinese Chef, you will support the Head Chef in delivering premium Chinese cuisine, lead a passionate kitchen crew, and ensure an exceptional dining experience for guests.

Key responsibilities

• Assist the Head Chef with menu planning, execution, and innovation of luxury Chinese dishes.
• Oversee daily kitchen operations, maintaining high standards of food preparation, presentation, hygiene, and safety.
• Manage food costs, inventory, and procurement to sustain profitability without compromising quality.
• Ensure strict compliance with hotel and local food safety regulations.
• Lead, mentor, and inspire the culinary team, fostering a collaborative and innovative environment.
• Collaborate closely with the service team to enhance guest satisfaction and drive revenue.

Required profile

• Proven experience as a Sous Chef in a five‑star luxury hotel or fine‑dining setting; Michelin‑star experience in the UAE/Middle East is a plus.
• Deep expertise in Chinese cuisine, with strong knowledge of traditional ingredients and techniques.
• Solid understanding of food cost control, inventory management, and procurement.
• Excellent leadership and communication skills in English; fluency in Chinese is a strong advantage.
• Highly organised, detail‑oriented, and able to thrive in a fast‑paced, guest‑focused environment.
