Sous Chef - Pastry Shop

About the role

The Sous Chef – Pastry Shop will join the culinary team of Wynn Al Marjan Island, the first integrated resort in the UAE scheduled to open in 2027. Based in Ras Al Khaimah, the role is responsible for overseeing the daily operations of the pastry kitchen, maintaining high quality standards, and supporting menu development for a world‑class hospitality venue.

Key responsibilities

• Manage day‑to‑day pastry kitchen activities to ensure efficiency, consistency and adherence to culinary standards.
• Monitor resource consumption, optimise equipment use, and control inventory of ingredients and supplies.
• Collaborate with the Executive Chef to develop weekly set menus, monthly promotions and seasonal pastry offerings.
• Ensure all pastries are prepared and presented according to established recipes, quality benchmarks and HACCP guidelines.
• Lead, coach and motivate the kitchen team, fostering high performance, productivity and teamwork.
• Maintain cleanliness and hygiene of the kitchen, equipment and utensils in compliance with health and safety regulations.
• Respond promptly to guest requests and feedback to continuously improve the dining experience.

Required profile

• Secondary school diploma or equivalent; culinary qualification preferred.
• Extensive pastry knowledge, including cost control and pricing of ingredients.
• Strong leadership and supervisory abilities with a proven track record of motivating teams.
• Excellent communication and interpersonal skills for effective interaction with staff and management.
• Organisational and time‑management capabilities to oversee inventory, staff schedules and daily operations.
