Sushi Chef de Partie – Japanese Cuisine

About the role

Wynn Al Marjan Island is seeking a Sushi Chef de Partie – Japanese Cuisine to join its culinary team. The role involves leading the sushi station in a fine‑dining environment within a new integrated resort slated to open in 2027.

Key responsibilities

• Supervise daily sushi station operations, ensuring smooth service and adherence to quality standards.
• Prepare and present a variety of sushi and Japanese specialties, including nigiri, sashimi, maki, temaki and specialty rolls.
• Manage freshness, storage, rotation and HACCP compliance of all ingredients and perishable products.
• Monitor ingredient usage, portion control, inventory levels and food costs to minimise waste and support profitability.
• Train and mentor junior team members in sushi preparation, knife skills and product knowledge.

Required profile

• 3–5 years of experience in a fine‑dining Japanese restaurant, luxury hotel or upscale hospitality setting.
• Strong knowledge of authentic Japanese cuisine, sushi techniques and fish butchery.
• Experience supervising and developing junior culinary staff.
• Excellent organisational and time‑management abilities in a fast‑paced environment.
