Sushi Commis I – Hotel Kitchen

About the role

Join the culinary team at Sofitel Dubai Jumeirah Beach as a Sushi Commis I, supporting the preparation of high‑quality sushi and other dishes in a five‑star hotel environment.

Key responsibilities

• Prepare ingredients by portioning, chopping, peeling, cleaning and storing according to recipes and daily operational needs.
• Measure, weigh and combine ingredients accurately using scales and standard utensils.
• Cook and assemble a variety of dishes—including sushi, meats, fish, vegetables, sauces, salads, rice and hot/cold displays—following established recipes and presentation standards.
• Operate kitchen equipment such as fryers, ovens, grills, microwaves and burners safely and efficiently.
• Maintain food safety by adhering to HACCP, cold‑chain and UAE Municipality regulations, conducting quality checks and managing FIFO stock rotation.
• Assist the Demi Chef de Partie and Chef de Partie with mise‑en‑place, production levels for daily service and special events, and support other kitchen stations as needed.

Required profile

• Previous experience in a similar role within a 4‑ or 5‑star hotel, resort or high‑volume restaurant in the UAE is preferred.
• Basic knowledge of international cuisines, cooking techniques and food safety standards.
• Strong organizational skills, ability to work under pressure and flexibility to work shifts, weekends and public holidays.
• Positive team player attitude with a commitment to continuous learning.
