Assistant General Manager – Hospitality

About the role

Sunset Hospitality Group is looking for an experienced Assistant General Manager to support the launch and ongoing success of TAPASAKE, a premium dining concept that fuses Japanese and Mediterranean cuisine. You will work closely with the General Manager to ensure smooth daily operations, drive commercial performance, and deliver memorable guest experiences in a vibrant poolside setting.

Key responsibilities

• Assist the General Manager in overseeing all restaurant operations, from front‑of‑house service to back‑of‑house coordination.
• Lead, coach and motivate front‑of‑house teams to maintain high service standards and exceed guest expectations.
• Drive revenue growth through effective floor management, guest engagement and operational excellence.
• Monitor financial performance, including sales, labor costs and profitability, and take corrective actions as needed.
• Ensure consistent application of brand standards, policies and procedures.
• Build and nurture relationships with VIP guests, partners and other stakeholders.
• Support recruitment, onboarding, training and development of team members.
• Maintain compliance with health, safety, hygiene and company standards.
• Participate in pre‑opening activities such as team mobilization, training and operational setup.

Required profile

• Minimum 2 years of experience as an Assistant General Manager or similar role in a luxury or lifestyle standalone restaurant.
• Strong background in high‑volume dining concepts, preferably Japanese, Mediterranean or festive‑style venues.
• Proven leadership of large front‑of‑house teams.
• Solid commercial acumen with experience in budgeting, P&L management and KPI tracking.
• Excellent guest‑relations skills, especially with VIP clientele.
• Experience in pre‑opening projects is highly desirable.
• Fluent in English; additional European languages are a plus.
