Assistant Restaurant Manager – French Fine Dining

About the role

The Assistant Restaurant Manager will support the daily operations of Bord Eau, a French fine‑dining venue within Shangri‑La Qaryat Al Beri. Reporting to the Restaurant Manager, you will help deliver a Michelin‑level experience, ensuring every guest receives impeccable service in a luxury setting.

Key responsibilities

• Assist in overseeing all front‑of‑house activities to guarantee seamless, personalized guest experiences.
• Supervise, train, and develop team members according to luxury and fine‑dining service standards.
• Anticipate guest needs, manage feedback, and resolve issues promptly to maintain high satisfaction.
• Support inventory control, cost management, and wine program initiatives while ensuring compliance with food safety and hygiene regulations.
• Collaborate with culinary and beverage teams to enhance menus, wine pairings, and overall dining concepts.

Required profile

• Fluent in French and English with strong written and verbal communication.
• Minimum 3–5 years of restaurant operations experience, including 1–2 years in a fine‑dining or Michelin‑recognized establishment.
• Proven ability to uphold luxury hospitality standards and deliver exceptional guest engagement.
• Leadership, coaching, and team‑development capabilities.
• Professional appearance, meticulous attention to detail, and a passion for hospitality excellence.
• Preferred: Diploma or bachelor’s degree in hospitality or related field.

Required skills

• Advanced wine knowledge (minimum WSET Level 2) with ability to recommend and upsell pairings.
