Assistant Stewarding Director – Catering & Banquets

About the role

Wynn Al Marjan Island is seeking an Assistant Stewarding Director to support the Executive Director in maintaining the highest standards of cleanliness, hygiene and operational efficiency across its catering and banquet operations. This senior position will play a pivotal role in preparing the new resort for its 2027 opening.

Key responsibilities

• Assist the Executive Director in planning and overseeing kitchen sanitation and compliance with health and fire regulations.
• Conduct daily kitchen inspections and supervise maintenance of all banquet equipment, both stationary and portable.
• Manage inventory control, procure supplies and equipment within budget, and support outlet setup and teardown.
• Handle administrative duties, staff scheduling, and assume the Executive Director’s responsibilities in their absence.
• Support banquet plate‑ups, transport and stock items, and coordinate with chefs and other departments to meet service needs.
• Enforce HACCP protocols and local hygiene standards, develop stewarding strategies, and contribute to budgeting and forecasting.
• Identify and source equipment, ensure compliance with procurement processes, and collaborate with Food & Beverage leaders.

Required profile

• Minimum secondary school education; higher qualifications are a plus.
• At least 10 years of leadership experience in a 5‑star hotel or integrated resort, with a minimum of 8 years in stewarding.
• Must be 21 years of age or older due to gaming regulatory requirements.
• Strong professional demeanor, multicultural communication skills, and adherence to company policies.
