Baker Tournant – Cruise Ship

About the role

This is a shipboard Baker Tournant position on a cruise ship, responsible for the daily operation and production of the bakery shop and its bread assortment. The role works closely with the Head Baker and the Executive Chef and must meet United States Public Health inspection standards.

Key responsibilities

• Ensure the smooth and efficient operation and control of the bakery shop and production daily according to company policies.
• Be responsible for the production, quality and presentation of the bread assortment used in the daily menus.
• Assist the Head Baker in preparing production forecasts and recording leftovers to avoid waste and keep food costs within budget.
• Help set up the bread display in the various buffets.
• Follow United States Public Health rules and regulations and make sure they are followed every day.
• Keep the bakery clean according to the Executive Chef's schedule, using proper methods to minimise damage to equipment.
• Make sure the bakery is ready for announced or unannounced USPH inspections by the ship's management or USPH inspectors.
• Requisition and transport items from the main stores to the bakery when assigned.
• Check that recipes and yields match company standards.
• Assist the CDP Baker with the daily consumption re-cap required by the Executive Chef.
• Know the ship's standard operating procedures and help guests and crew with inquiries.
• Attend meetings, training and other work-related activities as required, and perform other duties assigned by the supervisor or management.

Required profile

• Minimum of three years' experience as a Baker in an upscale hotel, resort, cruise ship or banquet service; shipboard experience preferred.
• High school or basic education equivalency.

Required skills

• Knowledge of proper cleaning techniques, requirements and use of equipment.
• Knowledge of United States Public Health rules and regulations.
