Chef De Partie - Butchery

About the role

The DoubleTree by Hilton Resort and Spa Marjan Island in Ras Al Khaimah is looking for a Chef de Partie - Butchery. You will prepare, portion and maintain the quality of meats, poultry and seafood to the highest standards, working closely with the culinary team to ensure consistency, food safety and operational excellence.

Key responsibilities

• Prepare, cut, trim, portion and store meats, poultry and seafood according to Hilton quality and presentation standards
• Inspect raw ingredients for freshness and quality before preparation
• Follow HACCP, sanitation and food handling procedures
• Collaborate with the Executive Chef, Sous Chefs and kitchen team
• Monitor stock levels, control waste and keep the butchery section ready for service
• Ensure accurate portioning, maximise yield and support inventory management
• Assist in preparing products for various outlets and events

Required profile

• Diploma in Culinary Arts, Professional Cookery, Butchery or a related field preferred
• Previous experience as a Demi Chef de Partie, Chef de Partie - Butchery or similar in a hotel, resort or high-volume kitchen
• Good command of English; additional languages are an advantage
• Ability to train and support junior team members
• Flexibility to work various shifts in a multicultural team

Required skills

• Meat fabrication, portioning and trimming techniques
• Food safety, hygiene and HACCP principles
• Strong organisation and teamwork, with good communication
