Chef De Partie - Sushi - 5-Star Luxury Hotel

About the role

We are looking for a skilled Chef de Partie specializing in sushi to join the culinary team of a prestigious 5‑star luxury hotel. The role focuses on creating authentic Japanese sushi dishes and supporting the overall dining experience for discerning guests.

Key responsibilities

• Prepare and present a variety of sushi items – nigiri, sashimi, maki, specialty rolls – following authentic Japanese techniques.
• Ensure freshness and quality of all ingredients through careful selection, storage, and inventory control.
• Assist the Sushi Chef in menu development and innovation.
• Maintain a clean, organized sushi station in line with health and safety standards.
• Train and supervise junior sushi kitchen staff, fostering teamwork and high standards.
• Manage ordering and stock levels of sushi ingredients to avoid shortages.

Required profile

• Minimum 3 years experience as a Chef de Partie specializing in sushi within a luxury hotel or fine‑dining setting.
• Deep knowledge of traditional Japanese sushi preparation and presentation.
• Culinary certification or relevant qualification preferred.
• Strong attention to detail, commitment to food safety, and ability to work under pressure.
• Excellent communication and leadership skills.
• Flexibility to work evenings, weekends and holidays.
• Current residence in the UAE.
