Commis I - Kitchen

About the role

Swissôtel Al Murooj, a Swissôtel by Accor in downtown Dubai, is hiring a Commis I for its kitchen. The role is full-time and permanent, centred on planning, preparing and plating dishes to Swissôtel standards while working under the direction of the chefs.

Key responsibilities

• Plan and organize daily tasks, make requisitions for the next day and prepare mise en place with the chef de partie or senior chef
• Work on the assigned station, following instructions and standard recipes, and set up the station on time for each service
• Taste and season food correctly, keep waste low and help meet budgeted food costs
• Prepare and plate food orders from F&B staff, and leave enough mise en place for the next shift using production lists and shift-handover SOPs
• Keep work areas, equipment and refrigerators clean and organized, following HACCP, clean-as-you-go and "first in, first out" principles
• Store food covered, dated and labelled, and assist stewards with daily cleaning
• Sign acceptance for tools, knives and uniforms and return them if lost or damaged; fill out log sheets daily
• Take part in cross-training, work unsupervised and stay flexible to business demands and working hours

Required profile

• College graduate or equivalent education from an accredited culinary institute or formal culinary training
• At least one year of professional kitchen experience in a fine dining or upscale establishment
• Ability to work independently and professionally under demanding conditions
• Willingness to work unsupervised and adapt to business needs
