Director, Food & Beverage

About the role

The Fairmont The Palm, a luxury resort on Dubai’s Palm Jumeirah, is seeking an experienced Director of Food & Beverage to lead its diverse F&B portfolio. Reporting to the Hotel Manager, you will shape the guest experience across 11 outlets while driving profitability and innovation.

Key responsibilities

• Lead and manage day‑to‑day operations of the Food & Beverage division, ensuring service standards are consistently met.
• Develop and launch innovative promotions, menus and concepts to attract both hotel guests and external visitors.
• Support all F&B departments in achieving financial and operational targets.
• Prepare annual budgets, monitor food, beverage, labour and operating expenses, and ensure fiscal responsibility.
• Assist in creating the annual strategic plan and work towards its goals.
• Implement and continuously improve guest service standards, product quality and profit margins.
• Oversee recruitment, training and development of F&B staff, fostering career growth.
• Ensure compliance with all departmental policies, procedures and safety regulations.

Required profile

• 7‑10 years of progressive leadership experience in luxury hotel food & beverage operations, preferably in a union environment.
• Previous experience as a Food & Beverage Director or equivalent senior role.
• University or college degree in a related discipline.
• Strong interpersonal, problem‑solving and decision‑making abilities.
• Highly responsible, reliable and able to work under pressure in a fast‑paced environment.
• Team‑oriented with a focus on delivering exceptional guest experiences.

Required skills

• Proficiency with Microsoft Windows applications (e.g., Microsoft Office).
