Food and Drinks Manager

About the role

The Food and Drinks Manager leads food and beverage operations across restaurants, bars, in-room dining, banqueting and special events at Conrad Dubai. The role inspires teams to deliver exceptional service while driving revenue, operational excellence and the highest standards of quality and safety.

Key responsibilities

• Develop and implement food and beverage strategies aligned with hotel objectives, guest expectations and commercial goals.
• Inspire, mentor and develop venue managers and service leaders, fostering accountability, engagement and high performance.
• Manage the daily operation of restaurants, bars, lounges, in-room dining and banqueting services.
• Champion personalised service, anticipate guest needs and handle service recovery effectively.
• Carry out regular operational walkthroughs to maintain service, cleanliness, presentation and product quality.
• Manage budgets, forecasts and financial targets, optimising revenue, profitability, labour productivity and operating costs.
• Analyse profit and loss statements, sales reports and key performance indicators to find growth opportunities.
• Work with culinary and bar leaders to improve menus, pricing, seasonal offerings and promotions.
• Uphold food safety, sanitation and workplace safety standards in line with local regulations, HACCP principles and hotel policy.
• Support succession planning and career development for team members.
• Partner with Culinary, Finance, Marketing, Human Resources and Events teams, and continuously review processes to improve efficiency and quality.
