General Manager - South-East Asian Restaurant

About the role

Wynn Al Marjan Island is seeking a dynamic General Manager to lead its South‑East Asian fine‑dining restaurant. Reporting to the Food & Beverage director, you will be responsible for delivering exceptional guest experiences while driving revenue and profitability in a brand‑new integrated resort slated to open in 2027.

Key responsibilities

• Lead all aspects of restaurant operations, including service, culinary, people, and financial performance.
• Ensure flawless execution of service standards, guest engagement, and brand positioning.
• Drive top‑line revenue, control costs, and maximize labour productivity.
• Monitor daily performance, analyse KPIs and financial metrics, and implement continuous improvements.
• Coach, develop and evaluate department heads and team members to foster a performance‑driven culture.
• Collaborate with culinary and bar teams on menu development, promotions, and personalised guest experiences.
• Maintain compliance with health, safety, licensing and hygiene regulations.
• Manage inventory, equipment, scheduling, training and POS system operations.
• Provide personalised service to VIP guests and regular patrons.

Required profile

• 3‑4 years of experience as a General Manager or equivalent in a fine‑dining restaurant with an average of at least 50 covers per day.
• Experience in 2‑star or 3‑4‑hat Gault Millau establishments is preferred.
• Secondary school diploma; a bachelor’s degree in hospitality management and WSET Level 2 are advantageous.
• International experience in trend‑setting cities such as Tokyo, London, Paris, New York, Hong Kong, Singapore or Shanghai is a plus.
• Strong leadership, management and supervisory abilities with excellent communication skills.

Required skills

• Proficiency in Microsoft Office.
• Experience with point‑of‑sale (POS) software.
