Junior Sous Chef - Cold Kitchen

About the role

The Ritz-Carlton Abu Dhabi Grand Canal is looking for a Junior Sous Chef for its cold kitchen. This is a full-time, non-management position based in Abu Dhabi, within the Food and Beverage and Culinary category.

Key responsibilities

• Prepare special meals or substitute items and prepare cold foods according to recipes, quality standards, presentation standards and the food preparation checklist.
• Regulate the temperature of ovens, broilers, grills and roasters, and pull food from freezer storage to thaw in the refrigerator.
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared.
• Maintain food logs and inform the Chef of excess food items for daily specials.
• Tell Food and Beverage service staff about menu specials and out-of-stock items, and anticipate guests' service needs.
• Assist management with hiring, training, scheduling, evaluating, counselling, disciplining and motivating staff, and act as a role model.
• Follow company, safety and security policies, report accidents and unsafe conditions, complete safety training and certifications, and keep a clean, professional appearance.
• Work in a team, speak clearly and professionally, and perform other reasonable duties requested by supervisors.

Required profile

• At least 3 years of related work experience.
• No supervisory experience required.
• Preferred: a technical, trade or vocational school degree.
• Able to stand, sit or walk for long periods, reach overhead and below the knees, and lift up to 25 pounds without assistance.
