Restaurant General Manager - Talea

About the role

Emirates Palace Mandarin Oriental, Abu Dhabi is looking for a Restaurants, Bars & Experiences Restaurant General Manager for Talea, its Michelin-starred Italian restaurant created by two-Michelin-starred Chef Antonio Guida. The role leads the restaurant, builds demand and long-term guest loyalty, drives commercial performance and develops a high-performing team.

Key responsibilities

• Set and maintain standards for customer service, front and back of house, and ensure compliance with fire, safety and hygiene regulations including HACCP
• Drive sales to full potential in the appointed outlets and pursue entrepreneurial growth opportunities
• Manage the kitchen hierarchy, support the Chef de Cuisine, and complete daily, weekly and monthly forecasts for revenue and products
• Handle complaints and reservations promptly, maximise seating capacity and manage supplier orders and shelf life
• Drive financial performance: revenue, profitability and operational efficiency, with margin discipline through labour and food cost control and menu engineering
• Design and deliver promotions, activations and experiences, and build guest loyalty through feedback and service recovery
• Oversee day-to-day operations, coordinate with Culinary, Reservations and other departments, and lead a high-performing team with scheduling, performance and training

Required profile

• Experience leading restaurant operations in luxury hospitality or premium restaurants, with a minimum of 3-5 years as a restaurant manager in a luxury hotel or Michelin-starred restaurant
• International work experience in at least two of Asia, Europe, North America and preferably the Middle East
• Bachelor's degree or higher national diploma in hospitality, hotel or business management
• Proven leadership, team development and commercial awareness
• Proficiency in English; additional languages are an advantage
