Restaurant Manager – Fine Dining

About the role

Wynn Al Marjan Island is seeking an experienced Restaurant Manager to lead one of its fine‑dining venues within the upcoming integrated resort. The role involves overseeing daily operations, driving revenue, and maintaining five‑star service standards.

Key responsibilities

• Execute daily shifts according to SOPs, ensuring consistency, timeliness, and mise en place readiness.
• Control costs within approved budgets, support the GM with labor scheduling, inventory, and cash handling.
• Develop and implement business strategies and promotions to maximize revenue and seat utilization.
• Coordinate with the kitchen on menu availability, dietary needs, pacing, and specials.
• Manage reservations, waitlist, and floor plans to optimize guest flow and turn times.
• Prepare daily shift reports, escalate issues, and propose solutions to the GM.
• Supervise and coach supervisors, captains, and service teams to achieve department goals.

Required profile

• 2–3 years leadership experience in fine‑dining environments, preferably with 50+ covers per day.
• Experience in Michelin‑recognized or Gault Millau restaurants is a plus.
• Strong product knowledge of cuisine and wine; WSET Level 2 preferred.
• Secondary school diploma; Bachelor’s in hospitality management advantageous.
• Fluent English and another European language, with excellent communication skills.

Required skills

• Proficiency with MS Office applications.
• Experience using POS software and digital reporting tools.
• Basic budgeting knowledge and understanding of allergen management and food safety standards.
