Sous Chef - Italian and Mediterranean Cuisine

About the role

We are looking for a motivated Sous Chef to support the efficient operation of our kitchen, delivering high‑quality Italian and Mediterranean dishes in line with Hyatt International’s brand standards. The role works closely with the Chef de Cuisine to ensure smooth daily service and exceptional guest experiences.

Key responsibilities

• Assist the Chef de Cuisine in managing the kitchen as an independent profit centre.
• Plan, organise, direct and control kitchen activities, ensuring timely preparation and service.
• Maintain strict adherence to kitchen hygiene, occupational health and safety standards.
• Support menu development and recipe maintenance for Italian and Mediterranean cuisine.
• Monitor inventory, control costs and contribute to budgeting processes.

Required profile

• Minimum 2 years experience as a Sous Chef or 4 years as a Chef de Partie in a hotel or large restaurant, preferably a luxury international brand.
• Proven knowledge of Italian and Mediterranean culinary techniques.
• Strong understanding of kitchen hygiene practices and health‑and‑safety regulations.
• Basic computer skills, including MS Office and a recipe maintenance system.
• Italian language proficiency is an advantage.
