Specialty Chef (Arabic Cuisine)

About the role

Miral Experiences manages and operates world-class attractions in Abu Dhabi, including Ferrari World, Yas Waterworld, Warner Bros. World, SeaWorld, CLYMB and TeamLab Phenomena. As Specialty Chef (Arabic Cuisine), you will ensure the smooth and efficient operation of the F&B department, directly supporting the opening, delivery and closing of the leisure facility. You are accountable for the quality, consistency and production of the food, personally perform tasks while leading the team, and supervise the specialty restaurant kitchen shift.

Key responsibilities

• Develop and train the team, set and enforce culinary standards and HACCP procedures, and ensure quality products, presentation and flavour.
• Manage the assigned kitchen efficiently, assign responsibilities to subordinates, check their performance and build a pool of qualified part-time staff with HR.
• Develop menus, buffets and specials using locally and seasonally available products, and design signature dishes.
• Control par stocks, conduct daily pre-shift briefings, monthly inventory checks and manage requisitions and storage of equipment and supplies.
• Handle guest enquiries courteously, report complaints to supervisors and follow up with guests.
• Keep the kitchen and outlet clean and organised, liaising with stewards and chefs on cleaning schedules.
• Report safety concerns, HACCP issues and incidents to management and the Executive Chef, and take part in evacuations.

Required profile

• Specialisation in Arabic cuisine within the outlet.
• 1-2 years in the same role or 4 years' experience in a five-star hotel or similar establishment.
• Desirable: professional kitchen apprenticeship or chef training course, and 3-4 years' experience as a Specialty Chef.
• Good written and spoken English; multiple languages (native and English) desirable.
• Leadership, problem-solving and attention to detail; ability to work well with colleagues and management.
