About the role
We are looking for an experienced Sushi Chef to lead our kitchen operations in Dubai. The role involves supervising food preparation, maintaining high presentation standards, and ensuring a clean, safe environment throughout the kitchen.
Key responsibilities
- Supervise kitchen staff on each shift, ensuring food preparation, organization and presentation meet established standards.
- Maintain kitchen equipment, issue maintenance orders when needed, and ensure all tools are in proper working order.
- Train staff according to planned programs, correct production errors, and enforce portion control to achieve target food cost percentages.
- Develop new menus and recipes, contribute creative ideas for merchandising, decoration and presentation.
- Order fresh and dry goods daily, manage stock levels at par, and minimise waste and spoilage.
- Monitor health, safety and hygiene standards, follow cleaning rotas and emergency procedures.
- Assist the restaurant manager in budgeting, cost control and financial performance analysis.
- Attend weekly meetings, briefings and training sessions as scheduled.
