Chef de Partie – Garde Manger

About the role

We are looking for a skilled Chef de Partie to lead our Garde Manger station at W Hotels, Dubai. You will be responsible for preparing high‑quality cold dishes, maintaining food safety standards, and supporting the culinary team during busy service periods.

Key responsibilities

• Prepare and present cold dishes, salads, charcuterie, and pâtés according to recipes and presentation standards.
• Regulate temperature of ovens, broilers, grills, and roasters; monitor food logs and ensure proper storage.
• Thaw frozen items safely, portion and garnish dishes accurately, and maintain inventory of specialty items.
• Communicate menu specials, out‑of‑stock items, and excess food usage to the Chef and service staff.
• Assist with hiring, training, scheduling, and performance coaching of junior kitchen staff.
• Follow all health, safety, and security policies; report any hazards or incidents.

Required profile

• Technical or vocational culinary education.
• Minimum 3 years of experience in a Garde Manger or cold‑kitchen role.
• Strong knowledge of food safety and hygiene standards.
• Ability to work efficiently in a fast‑paced, high‑pressure environment.
