Commis 2 – Kitchen Assistant (Hotel)

About the role

The Commis 2 will support the culinary team at Dukes The Palm Dubai Hotel, preparing and producing food while upholding high standards of quality, hygiene and cleanliness. Working under the guidance of the Chef de Partie and senior chefs, you will develop your culinary skills in a dynamic hotel environment.

Key responsibilities

• Assist in preparing ingredients and food items according to approved recipes.
• Complete daily mise‑en‑place for the assigned kitchen section.
• Support senior chefs with cooking, plating and food preparation during service.
• Store, label and rotate food products following FIFO procedures.
• Maintain cleanliness and organization of workstations, equipment and kitchen areas.
• Follow HACCP, food safety, hygiene and sanitation standards at all times.
• Control food waste and use ingredients responsibly.
• Check freshness and quality of ingredients before use and report concerns.
• Handle kitchen equipment and utensils safely.
• Assist other kitchen sections during busy periods when required.

Required profile

• Previous culinary experience, preferably in a hotel or restaurant setting.
• Culinary qualification or relevant training is an advantage.
• Basic knowledge of food preparation and cooking techniques.
• Basic understanding of food hygiene and safety practices.
• Willingness to learn and develop culinary skills.
• Good teamwork and communication abilities.
• Ability to work in a fast‑paced environment.
• Flexibility to work shifts, weekends and public holidays.
