Commis II – Kitchen Assistant

About the role

The Commis II will join the culinary team at Fairmont Bab Al Bahr, a five‑star beachfront hotel in Abu Dhabi. Working under the Chef de Partie, you will help prepare, cook and present dishes that meet the hotel’s luxury standards while maintaining strict hygiene and safety practices.

Key responsibilities

• Prepare and cook food according to standard recipes and presentation guidelines.
• Assist the Chef de Partie with daily operations of the assigned kitchen section.
• Maintain cleanliness and organization of workstations, equipment and storage areas.
• Follow HACCP, food safety and hygiene standards at all times.
• Store, label and rotate food using the FIFO method.
• Support mise en place and ensure all ingredients are ready before service.
• Monitor food quality, report concerns and minimise waste.
• Help with inventory reporting and stock control.

Required profile

• 1–2 years of experience in a hotel or upscale restaurant kitchen.
• Good knowledge of food preparation techniques and kitchen operations.
• Ability to work efficiently in a fast‑paced, team‑oriented environment.
• Commitment to high standards of hygiene, safety and guest satisfaction.
