Cost Controller – Food & Beverage

About the role

The Meydan Hotel is seeking a Cost Controller to manage food and beverage (F&B) costs, inventories and profitability across its luxury outlets. You will work closely with the Executive Chef, Director of F&B and operations teams to ensure accurate cost reporting and optimal margin performance.

Key responsibilities

• Calculate daily, weekly and monthly F&B costs and compare them against sales.
• Verify receiving reports, invoices and requisitions; ensure correct coding and pricing.
• Transfer sales data from the Point‑of‑Sale system to the inventory system and perform spot checks on purchasing, receiving, storing and issuing functions.
• Create and maintain recipe costs, menu engineering and portion controls to minimise waste and pilferage.
• Conduct monthly food, butcher and alcohol tests to determine yields and compliance.
• Prepare monthly F&B cost reports, inventory turnover reports and bar variance reports.
• Participate in half‑yearly stock takes for linen, equipment and housekeeping inventories.
• Analyse market surveys, supplier rebates and purchase price comparisons to support decision‑making.

Required profile

• Bachelor’s or Master’s degree in Commerce, Accounting or related field.
• Minimum 2 years of cost control experience in a five‑star hotel or similar hospitality environment in the UAE.
• Strong understanding of accounting principles and F&B operations.

Required skills

• Proficiency in word‑processing software.
• Advanced skills in spreadsheet applications (e.g., Microsoft Excel).
• Experience with database software for inventory and cost tracking.
