Executive Pastry Chef

About the role

The Executive Pastry Chef will lead all pastry and bakery operations at Park Hyatt Dubai, ensuring the highest standards of quality, creativity, and presentation across every Food & Beverage outlet, banquet, and special event. This senior role combines menu innovation with operational excellence to deliver luxury pastry experiences that reflect the brand’s reputation.

Key responsibilities

• Manage day‑to‑day operations of the pastry kitchen, maintaining efficient workflow and compliance with Hyatt brand standards.
• Develop innovative dessert menus, pastries, breads, chocolates and seasonal specialties that align with the hotel’s luxury positioning.
• Lead menu planning, seasonal promotions and special culinary events in collaboration with the Executive Chef.
• Mentor, coach and develop the pastry team, fostering a positive, creative work environment.
• Oversee recruitment, performance management and disciplinary procedures for pastry staff.
• Control food costs, conduct inventory counts and ensure profitability.
• Ensure strict adherence to food safety and HACCP standards.
• Support hotel‑wide culinary events, VIP functions and new outlet openings.

Required profile

• Diploma or degree in Pastry Arts, Culinary Arts or equivalent.
• Minimum 8 years of pastry experience, including leadership roles in luxury hotels.
• Proven ability to lead, train and develop high‑performing pastry teams.
• Strong knowledge of food safety regulations and HACCP compliance.
