Executive Sous Chef

About the role

Miral Experiences is seeking an Executive Sous Chef to lead culinary innovation across its diverse Food & Beverage venues in Abu Dhabi. Reporting to the Executive Chef, you will shape menu concepts, ensure consistent quality, and support operational excellence in a fast‑paced, guest‑focused environment.

Key responsibilities

• Develop new menu items, recipes, presentations and seasonal offerings.
• Design complete menus with naming, descriptions, pricing recommendations and promotional items.
• Maintain culinary quality assurance across all venues, ensuring consistency of taste, presentation and standards.
• Standardise recipes, batch production procedures and preparation methods.
• Set plating, display, garnish, packaging and service standards.
• Analyse sales and performance data to recommend menu enhancements and revenue opportunities.
• Support labour planning, food‑cost optimisation and overall prime‑cost control.
• Coach, train and develop culinary and operations teams.
• Assist in recruitment, evaluation and development of kitchen staff.
• Ensure compliance with HACCP, food‑safety regulations and industry best practices.

Required profile

• Culinary Diploma (mandatory); a Bachelor’s degree in Hospitality or F&B Management is a plus.
• 10+ years of culinary experience, including at least 3 years in a Chef de Cuisine or Executive Sous Chef role within large‑scale hospitality, resorts, hotels, cruise lines or leisure attractions.
• Proven track record of menu innovation and operational leadership.
