Food Cost Controller – Dubai

About the role

La Vita is looking for an experienced Food Cost Controller to oversee food‑cost operations across its Dubai catering business. The role involves managing inventory, analysing cost variances and supporting purchasing decisions to improve profitability.

Key responsibilities

• Monitor food and beverage costs and analyse variances.
• Prepare daily, weekly and monthly cost, inventory and financial reports.
• Manage stock receiving, storage, issuing, FIFO/FEFO procedures and inventory reconciliation.
• Conduct regular and surprise stock counts.
• Investigate wastage, losses and stock discrepancies.
• Review purchase requisitions, LPOs, supplier pricing and purchasing activities.
• Perform recipe costing, yield tests, portion‑control analysis and menu costing.
• Support budgeting, forecasting and cost‑reduction initiatives.
• Maintain accurate records in POS, inventory and ERP systems.
• Assist with internal and external audits and ensure cost‑control procedures are followed.

Required profile

• Diploma or Bachelor’s degree in Accounting, Finance, Hospitality or a related field.
• 2–5 years of F&B cost‑control experience, preferably in catering or large‑scale operations.
• Strong understanding of food costing, inventory management and stock reconciliation.
• Excellent analytical abilities and proficiency in Excel.
• Experience with ERP/POS systems.
